Since its origins in 1248, La Chaîne has celebrated not only the art of fine dining, but the deeper pleasure of gathering—of sharing a table, a story, and a sense of belonging.
Here in San Diego, we are privileged to steward this legacy within one of the most dynamic and diverse culinary regions in the world. Our Bailliage brings together chefs, sommeliers, artisans, and passionate gastronomes who share a respect for excellence, hospitality, and the rituals that elevate a meal into an experience.

A Living Culinary Heritage

La Chaîne des Rôtisseurs is an international society devoted to the appreciation, preservation, and advancement of fine dining and culinary culture. Revived in Paris in 1950 after the hardships of war, the modern Chaîne united gourmands with a shared mission: to restore excellence at the table and honor the disciplines behind great cuisine and wine.
Today, La Chaîne spans more than 75 countries, with the United States home to its largest network of chapters. Across the world, members are connected by a shared respect for craft, tradition, and the joy of conviviality.

The San Diego Bailliage

Established in 1990, the San Diego Bailliage proudly carries this global tradition forward while celebrating the vibrant culinary landscape of Southern California. Through thoughtfully curated events—formal dinners, tastings, educational experiences, and special gatherings—we create meaningful opportunities for fellowship and discovery.
Our chapter also honors the legacy of the La Jolla Bailliage, founded in 1971 and recognized as one of the oldest in California, which merged with San Diego in 2026. Together, these histories enrich our community and deepen our commitment to excellence.
